A delicious and easy, pork sausage and apple bake with red onions and sultanas that adds a touch of sweetness to the dish.
If you have viewed some of my other recipe posts, you might have already discovered that I really enjoy quick and easy to prepare recipes that come together with little fuss. This pork and apple bake is one of those recipes that can be made in one pot and it only requires some initial prep work before popping it into the oven to finish the dish off. I wanted to share this recipe with you due to its simplicity and it is truly one of those classic hearty meals that can be enjoyed as a quick lunch or dinner.
Pork sausage and apple is a great combo and these two ingredients pair together so perfectly. In this dish, the addition of the red onions and sultanas lifts this dish to another level and adds a touch of sweetness. I also love adding some of what I would call my secret ingredient, sweet chilli jam with ginger as I love the flavour it adds to the dish. Not to worry if you do not have this ingredient on hand, then regular brown sugar will do just fine. I would definitely call this a “banger” of a meal and it is delicious served on a bed of mashed sweet potato!
Pork Sausage
Pork sausage is made by combining ground pork meat and fat with salt, seasonings, fillers as well as a preservative which is then filled into a casing. Coming from someone who worked within the meat industry, I can assure you that there are many different types of pork sausages but for this recipe, I made use of Woolworths Pork Bangers. This specific pork banger works really well but you can go ahead and use your prefered choice of pork sausage in the recipe. I would love to hear if you tried a different kind of pork sausage and how it turned out.
Apple Variety
Now apples are one of those things you either love or hate in foods. I am aware that there are people who do not like cooked fruit in foods but I personally do not mind it and in this specific dish, the apples complement the pork sausage so well. There are many varieties of apples but I made use of the Fuji variety as these apples are crisp and juicy with a perfect sweet/sour flavour balance.
Stock or Cider
In this recipe, I made use of chicken stock as it is my preferred method of making this dish. If you are a cider lover that will work in this recipe as well. You can either replace the stock portion with cider completely or you can replace half the stock portion with cider, that is entirely up to you.
Casserole Pot / Oven Roaster
This recipe requires an ovenproof pot or pan that is suitable for use on a stovetop and in the oven as once you are done cooking on the stovetop, it is then popped straight into the oven for the remainder of the cooking time. A casserole pot or an oven roaster with a lid really works well. I thought I would share a link to one of my favourite roasting pans. I use this stovetop roaster with a lid for all my roasting and one-pot meals as it cooks so beautifully and it can be used on both the stovetop and in the oven.
Ingredients Required
- Fuji apples
- Pork sausages
- Sultanas
- Sweet chilli jam with ginger / Brown sugar
- Vegetable Oil
- Chicken stock / Cider
- Fresh coriander
- Red Onion
- Salt & pepper
Recipe Instructions
- Preheat the oven to 180โ. Heat the vegetable oil in your casserole dish / roaster, over medium heat, on your stovetop. Add in the pork sausages and fry them for 5 minutes until they are nicely browned.
- Add the onions in with the pork sausages and cook for a further 5-10 minutes until the onions are translucent and lightly browned.
- Add the apples(cubed), chilli jam, chicken stock and sultanas into your casserole/roaster dish and place into the preheated oven. Allow to cook for 25 minutes with the lid on.
- Remove from the oven and stir, then place it back into the oven and cook for a further 25 minutes with the lid on.
- Remove the casserole/roaster from the oven and add in the chopped coriander. At this point, I pop it back into the oven for 5-10 minutes without the lid to allow everything to caramelise and this ensures any remaining liquid is absorbed. Season with salt and black pepper according to your taste preference.
- Serve on a bed of mashed sweet potato.

- 1 Casserole with lid / Oven Roaster with lid
Ingredients
- 2 Tablespoons Vegetable Oil
- 500 Grams Pork Sausage
- 2 Large Red Onions, Sliced
- 3 Medium Fuji Apples (peeled, cored and cubed)
- 1 Tablespoons Chilli Jam
- ยพ Cup Chicken Stock
- โ Cup Sultanas
- 1 Handful Freshly Chopped Coriander
- Salt and Black Pepper to taste
Instructions

Notes
- If you do not have chilli jam it can be replaced with an equal quantity of brown sugar.
- The chicken stock can be partially or completely replaced with cider.
